Classic Split Pea Soup
There are days where slaving over the stove to make a delicious dinner is not how you want to spend your evening. You would much rather spend time with family or relax at the end of a busy day.
That’s why it is so important to have a repertoire of recipes that are both simple to make and tasty. This split pea soup is just that.
It has minimal ingredients and is a protein rich bowl of soup with its hearty split peas. I often find myself going for seconds. Give this soup a try and let me know what you think!
Ingredients
- 1 cup dried orange split peas
- 4 cup vegetable broth
- 1/2 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 1/2 lemons, juiced
- 3/4 tsp sea salt
- 1 1/2 tsp extra virgin olive oil
Instructions
- Heat the olive oil in a medium sized pot over medium heat. Add the onion and garlic to your pot and saute for 2-3 minutes.
- Add the broth, dried split peas, and salt to to the pot. Cover the pot with a lid and simmer for 15 minutes.
- Add the lemon juice to the soup and mix. Remove from the stove and serve.
