With fresh apricots, and crunchy homemade oat granola, this breakfast parfait recipe is sure to be a winner! This dish is a refreshing change of pace by using an ingredient we don’t see often – apricot.
Apricots are a rich source of flavonoids, an antioxidant, and is a rich source of quercetin. Quercetin is a powerful fighter against free radicals and enhances your body’s ability to prevent and fight cancer. Apricots are also a great source of beta carotene and Vitamin C, a quality often found in foods with that distinct yellow and orange pigment.
Many people are familiar with dried apricots but did you know you can purchase them fresh as well?! When you find fresh apricots in your nearby grocery store, grab a few and enjoy this delicious parfait recipe.
What if I don’t have Apricots?
No problem! Simply replace the fruit in this recipe with your fruit of choice. Some other great options include fresh mango, blueberries, banana or strawberries.
This recipe isn’t sweet enough for me. Can I add some sugar?
Of course! But be conscious of the type and amount of sweetener you’re adding. If your goal is to prevent or tackle cancer, always choose sugar paired with fiber. What does this mean?
Fiber helps to prevent your body from overproducing insulin, the hormone that cancer cells love. Sweeteners like brown sugar, agave or maple syrup are devoid of fiber. BUT nature makes certain fruits naturally packed with fiber and they serve as great sweeteners!
For this recipe I would recommend the addition of bananas, mango or chopped dates to sweeten the dish to your likeness.

Apricot Oat Parfait
With fresh apricots, and crunchy homemade oat granola, this breakfast dish is sure to be a winner.
- 1/2 cup Plain Greek Yogurt
- 2 each Apricot
- 1/8 cup Rolled Oats
- 1/2 Tbsp Almond Slices
- 1 Tbsp Almond or Peanut Butter (sugar-free)
- 1/2 tsp Vanilla Extract
- 1/2 tsp Ground Cinnamon
- 1/8 tsp Sea Salt
- Non-Stick Olive Oil Spray

Preheat the oven to 350 degrees Fahrenheit, line a small baking tray with parchment paper or aluminum foil and coat with non-stick spray.

In a mixing bowl mix together, cinnamon, salt, vanilla extract and nut butter. Once mixed, stir in oats. Spread out mixture onto your lined baking tray. Put granola into the preheated oven and bake for 20-25 minutes or until oats are golden.

While your oats bake, wash and dice your apricot. Remove granola from the oven, allow to cool for 5 minutes. In a bowl or glass add a layer of each component (yogurt, fruit, granola), repeat layers and top with sliced almonds or shredded coconut.
