Easy Mediterranean Shish Kabob Recipe

Ingredients
- 1/4 lb Free-Range Chicken
- 1/2 Small Red Onion, cut into chunks
- 1/2 Yellow Bell Pepper, cut into chunks
- 8 Cherry Tomatoes
- 1 1/2 tbsp Extra Virgin Olive Oil
- 1/4 Lemon, juiced
- 1 tbsp Fresh Parsley, chopped
- 1/2 tsp Onion Powder
- 1/8 tsp Chili Powder
- 1/2 tsp Sea Salt
- 1/8 tsp Black Pepper
- 3 Wood Skewers (soaked)
Instructions
- Soak wooden skewers in water for at least 30 minutes or in the morning until dinner time. Preheat the oven to 450 degrees Fahrenheit.
- Chop parsley and in a small mixing bowl whisk together olive oil, lemon juice, parsley, garlic powder, red pepper flakes, salt and black pepper. Dice chicken into 1 inch thick cubes and add to marinade, allow to rest in marinade for 30 minutes or from morning until dinner time.
- Wash and chop onion and pepper. Line a sheet tray with aluminum foil. Skew marinated chicken and chopped onion, bell pepper, and cherry tomatoes alternating each piece. Place completed skewers on the tray and into the oven. Cook for 20 - 25 minutes or until chicken is completely cooked through, flip skewers half way through to evenly cook.
- Plate skewers with your side of choice and garnish with chopped parsley and lemon juice.
