Persian Savory Herb Quiche
This Persian Herb Quiche (also known as KuKu Sabzi) is one of the most flavorful, refreshing dishes one could try. This is a Persian Herb Frittata, that is made of fresh parsley, cilantro, dill, and green onions. This is a simple, flavorful, yet delicious and nutritious dish that comes together quickly by whisking some eggs with the herbs and some spices. KuKu can be served either as an appetizer or the main dish.
Traditionally, Kuku is made on the stovetop, but it also can be baked in the oven for a healthier version. I usually like to bake it as less oil is used. Kuku goes perfectly with a side of cucumber and yogurt or Tzatziki.
Ingredients
- 6 large pasture raised eggs
- 1 garlic clove, crushed
- 1 tbsp chickpea or almond flour
- 1 tsp baking powder
- 1/2 tsp turmeric powder
- 1 cup chives or green onions, chopped
- 1 cup cilantro, chopped
- 1 cup parsley, chopped
- 1 cup dill, chopped
- 2 tbsp extra virgin olive oil
- ground black pepper as desired
- 2 tbsp walnuts, chopped (optional)
- 2 tbsp dried barberries or cranberries (optional)
Instructions
- Preheat oven to 350°F.
- Whisk together the eggs, garlic, flour, turmeric, salt, olive oil, and a few cracks of black pepper. Whisk in the herbs, walnuts (if using), and dried barberries (if using).
- Brush a baking dish with oil and pour in the egg mixture in and use the back of a spoon to spread it out evenly. Bake uncovered for 30 minutes or until eggs are fully cooked.
- Cut in small wedges, serve hot or cold with a side of yogurt or a side salad.
