Creamy Chicken Lettuce Wraps
This recipe is both creamy and delicious with a perfect balance of savory and sweet. With the celery for some crunch and the grapes for some sweetness you can't just have one lettuce wrap and be satisfied. This recipe is also gluten-free and packed with protein. Enjoy!
Ingredients
- 6 oz Boneless Skinless Chicken Breast
- 1 1/2 cup Vegetable Broth
- 1/3 cup Grapes, halved
- 1/4 cup Celery, thinly sliced
- 1/2 Apple, diced
- 2 tbsp Parsley, minced
- 2 tbsp Greek Yogurt or Coconut Yogurt
- 1/2 tbsp Mayo (optional)
- 1 tsp DIjon Mustard
- 1 tsp Lemon Juice
- 1/4 tsp Sea Salt
- 1/8 tsp Black Pepper
- 4 Romaine Lettuce Leaves
Instructions
- Place the chicken breast in a pot and cover with the broth. Bring pot to a boil and cook for 10 minutes until internal temperature reaches 165F. Remove chicken from the broth, dice, and set aside.
- Wash and cut your grapes, celery, apple, and parsley. Add chicken, grapes, celery, apple, parsley, yogurt, mayo, mustard, lemon, salt and pepper to a bowl and mix.
- Wash and dry your lettuce. Scoop your chicken salad into each lettuce leaf and serve.
